IM UPSET!!!! upset this knife is so good!!!!
I'm a professional chef. I've been cooking for 20 years. Look most of the time I just need a reliable knife right. But the cost :( the arguments are endless ger over japanese 20 degrees vs 15, high carbon vs stainless, Rockwell rating...... at the end of the day what I need is a knife I can sharpen and is inexpensive enough so that when the guy next to me uses it when my back is turned and hits a bone and chips it or if I drop it and it breaks I don't want to loose sleep over it. So what price range would u say that lends me ?I'm not kidding buying good knives to use in a commercial kitchen is a gamble at best and regardless of price when they brake part of your soul dies just a smidgen:((((((( lolMost people would say 100 bucks for a hundred bucks if I could find the right knife I'm sold but still even today that's a good bit of money man. Now here's the problemYou want a cheep japanese style knife you like the look you like the feel and for the price you settle for a chinese knock off they are hit or miss sometimes you get good steel sometimes not what ever for 50 bucks even if it breaks there's some other kind on Amazon right.I donno who these guys are maybe they are a small forge in Japan trying to break into the market basically the knife is 98% finished i simply doesn't have a finish polish. BTW THIS IS PERFECT 100% in a week my knife would look like this out of the box little hazy not mirror polish maybe a few grind mars from the stone. For a commercial use that's just the reality. And you kniw what this knife is still handsome. In a major way it's like a cacophony of things a blacksmith might use to keep the msrp down. The finish and the final work with the edge geometry and slitly thicker spine. It's a work horse and let me tell you as a chef when you hear this blade SING!! For the first time you too will crack a creepy smile LOLThat's the thing right it's a real japanese blade the differance from a Chinese or German blade is something many could debate for days but for me how I check a blade is by running on a sharpening steel LISTEN TO THE SOUND songs are nice but a masterpiece you can feel in your bones. Buy one only then will you know what I mean.

Well-balanced and super sharp!
I really love this knife, it is *very* sharp and fits well in my hand. I haven't tried shaving with it but I'll bet it would do a good job if I did. If you want to try that, I advise caution lest you slice off a piece of your ear!The blade makes easy work of vegetables and meats but a word of caution: don't try to chop bones or anything hard with this or you'll risk damaging the blade. Wash it and dry it well immediately after use to keep it in top condition and you may occasionally need to get this professionally sharpened or use the proper tools to do it yourself.
