Purchased for my lady who loves making homemade pasta. Works perfectly, IF, you get your rope thickness at the correct size. Too big can be problematic as dough can get stuck in the wrong places leading to a need to clean it.Great, easy to use and reliable pasta maker.The hard part is having the patience to make a super sauce to accompany these little nuggets.

The media could not be loaded. Where has this been all my life?? I LOVE this Cavatelli Maker. I have used it just about every week since I got it. I have, in the past, made Cavatelli by hand and it is a slow labor of love. Some would be too thick, some would be too thin, and so they cooked unevenly. THIS baby makes it so much easier!The machine comes with a small instruction and recipe book that really helps. It is SO easy to use - just clamp it down and start rolling. It is important to get the dough texture and consistency right (as it would be with any pasta making, either by machine or manually). Once you master that, everything else is a cakewalk.The machine is sturdy and well made. The clamp works perfectly and keeps the machine stable while I am cranking away. The crank part turns with ease.It is important to only clean it with a brush (not included but a cheap paint brush will work). Do not immerse it in water. I do use a barely damp paper towel to wipe off the paddles, especially when I am making multiple batches. A bit of the pasta dough can dry and stick to the paddles.I have made up to 3 pounds of Cavatelli at a time with ease. Next weekend we will be making enough to freeze (10 or more batches depending on how many I can manage hand knead).Seriously I love this machine. I want to send one to all of my adult nieces to carry on the homemade pasta tradition!

THE BEST cavitelli machine!!!!!
We love to make cavitelli and bought a second one for another home. Can’t be without it. We have made it many many times so we have gotten to know the right consistency of the dough. One very good suggestion we got from a very experienced cavitelli maker is - DO NOT WASH MACHINE AFTER. Let it air dry - then use a long toothpick or a long wooden pick to get dried dough out. Everyone loves our homemade cavitelli and we make around 4-5 lbs at a time. We lay it out on flat pans to dry, then after 20 minutes or so- put a bunch in a plastic baggie and freeze flatly or if you can - put the just made pasta on the drying pan first for 20 minutes, then put that pan into freezer for 15 minutes- then into a baggie and then freeze.If you don’t do this- they stick together and you have a mess

Selling Defective Product
I bought a Cavatelli Maker from Cucina Pro for Christmas.I first got to use it in the middle of February...didn't work at all...the handle wouldnt even turn!!When I contacted the company, they used the old, "Oh we're sorry, but we have a 30 day return policy."Don't you just love it...we'll get away with selling defective products by having an extremely short return policy so we don't have to stand behind them!!!Watch out for Cucina Pro products!!

Works Like it Should.
Sorry, I don't have any images, but I am super happy with this little affordable pasta machine!!! Still haven't come to love my Kitchen Aide extruder. I just did a simple 2 parts of superfine semolina flour to 1 part of hot water, combined and let it set. Rolled the dough out, it needs to be drier than for a conventional roller. Cut it into strips and fed it through. I did flour them a bit like the videos I have seen and it was super fast. Dried them overnight and they are heading for the freezer. For the money, and if you have ever made them by hand, this is Groovy!! Can't wait to try it with a gnocchi dough!

Needed to add three 1/4" Tooth Lock Washers
After turning the handle around to the correct direction I saw that problem is a gap between the handle and the nut holding it on the spindle which would cause the device to not work properly. Fortunately I had some 1/4 inch Tooth Locking Washers from another project and put three of them on the spindle between the handle and the nut. This allowed the handle and the nut both fit tightly on the device. I was then able to quickly and make cavatelli. I use a firmer pasta dough with just semolina flour (400g), water (200mg) and a little salt. Also make sure that the dough is well dusted with flour before putting it through the machine. I give it three stars because it does make cavatelli as promised but it lost two stars because I had to supply my own hardware to make it work properly.

So quick & fun if you use the right dough!
This little machine is fantastic! I put off buying it for quite a while because of the negative reviews, but I’m so glad I finally purchased it! Turn the handle rightside out like other reviews say (it’s on backwards to fit in the box), and hook it to your cutting board (won’t fit on counter). I made my own untraditional recipe & cranked out so many cavatelli so fast! It was super fun, even my husband wanted to play with it! I see no issues whatsoever with the quality - if you use the right dough density (not too stiff) and follow cleaning instructions (don’t wash it), I can’t see this not lasting forever. I have lots and lots of pasta gadgets (every kitchen aid pasta attachment, a chitarra, gnocchi boards, etc) & this one is definitely on par with quality, not to mention the quickest to use. This was my recipe (not traditional, I know! But still so tasty!):360g flour (I only had AP and it worked fine)1/2 tsp salt3 eggs1/4 cup olive oilMy dough was supple and soft but not sticky. Had no problems with the machine at all.
