Maybe 1/4 to 1/2 inch. Enough for items to become stuck between them.

Q: Can the blades be sharpened?

No sure. I don't see where you can take the blades off so it may be difficult.

Q: Will this cut through cooked chicken or steak?

It is sharp enough and may work for a small quantity if you need to mince it, but I would think a chefs knife or meat grinder would be preferred. Not really designed for meat.
