Q: Can this bag fit a water bottle

It's long enough for a standard size 16 oz disposable water bottle to lay down in it. A 20 oz bottle will fit diagonally, but you'd be limiting space for other items like that. If you want to stand a bottle upright you're limited to about 6", which isn't even tall enough for my short 14 oz water bottle.

It’s made from a fabric-like material.

Q: is the grey more purple or grey? the pictures look a little purple lol (im deciding between black and grey) :)

It is definitely more grey - almost white but more grey than white. No where near purple. ^_^

Q: Can it fit a small jacket?

Only if the material is really thin and you fold it small. It's not a huge bag but it's not a small bag either.
